Additional Ingredients Required for the Black Rock IPA:
For fermentation you will also require 1kg of dextrose. As an alternative to dextrose consider Liquid Brewing Sugar to reduce the sweet finish and improve the mouthfeel of your brew. Liquid Malt will give you a smoother mouthfeel and more body – we would suggest using a Ultra Light LME or Light LME for a smooth malt character.
Premium Yeast Options:
The Black Rock IPA does come with style appropriate yeast. Selecting a premium yeast can give you more flexibility when brewing in ambient temperatures and can improve the quality of your final product or support unique flavour characteristics.
For a crisp clean IPA the SafAle US-05 is the go-to yeast for many brewers or if you’re brewing a craft IPA with a hoppy profile the Mangrove Jacks M66 Hop Head Ale Yeast will support the hop forward character.
Suggested hop pairing:
Use up to 200grams of hops (in equal portions of each variety).
Option One: Tropical and Juicy NZ IPA
Nelson Sauvin and Riwaka
This pairing creates a bold and expressive New Zealand IPA with an intensely aromatic, tropical, and citrus-forward profile. Nelson Sauvin delivers signature white wine, gooseberry, and crushed grape notes, while Riwaka amplifies the juiciness with intense grapefruit, passionfruit, and a hint of dank diesel funk. Expect a vibrant aroma bursting with Sauvignon Blanc-like fruitiness, layered with zesty citrus and a punch of tropical intensity—perfect for a modern, hop-saturated IPA that showcases the best of New Zealand hops.
Try our Tropical Burst Hop Blend featuring Riwaka, Nelson Sauvin, and Motueka—crafted for a bold, tropical, and uniquely New Zealand IPA. Expect bright citrus, intense passionfruit, and a distinct wine-like character.
Option Two: Classic American IPA
Cascade and Centennial
This pairing creates a classic American IPA with a bright, citrus-forward character and a balanced, old-school hop punch. Cascade brings its signature grapefruit, floral, and spicy notes, while Centennial amplifies the citrus with bold lemon, orange peel, and a touch of pine. Together, they create a crisp, refreshing IPA with a clean bitterness, floral complexity, and a lingering citrusy finish—perfect for those who love a timeless, West Coast-inspired brew with a smooth yet assertive hop presence.
Option Three: West Coast IPA
This pairing creates a bold and resinous West Coast IPA with an intense dank, piney, and citrus-driven profile. Simcoe delivers deep layers of grapefruit, pine, and subtle stone fruit, while Columbus brings a punch of pungent, earthy bitterness with herbal and spicy undertones. Together, they create a crisp, dry, and aggressively hopped IPA with a lingering resinous finish—perfect for those who love a classic, no-nonsense West Coast bite with deep complexity and bold hop intensity.
Looking for a food match? The Black Rock IPA Goes Well With…
1. Fish and Chips: The crisp bitterness and citrusy hop notes cut through the richness of battered fish and fries, creating a refreshing contrast that keeps each bite feeling light and flavorful.
2. Kumara Wedges with Aioli: The caramelized sweetness of roasted kumara pairs beautifully with the hoppy bite of an IPA, while a garlicky aioli adds a creamy contrast.
3. Hangi or Smoked Meats: Earthy, smoky flavors from traditional slow-cooked meats harmonize with the bold hop character of an IPA, enhancing both the beer’s complexity and the depth of the dish.
4. Cheddar and Crackers: The malty backbone and hop bitterness of an IPA balance out the sharp, tangy flavors of aged cheddar, making for a perfect snack or pre-dinner pairing.
5. Pavlova with Passionfruit Drizzle: A surprising but delightful pairing! The beer’s citrus and tropical fruit notes play well with the tartness of passionfruit, adding a crisp contrast to the sweetness of the meringue.
