This light gold Pale Ale has a base of pale ale malts to showcase the tropical fruit aroma of the Mosaic hops. This Craft Beer Kit comes complete with American Ale Yeast and Mosaic dry hop pellets. For a Pale Ale, we recommend you add 1.5kg Brick Road Extra Light malt extract. To boost the tropical fruit aromas, add up to 200g of Australian or New Zealand hops like Galaxy, Nelson Sauvin or Motueka hops.

Only the finest grains are selected and malted for the Brick Road Mosaic Pale Ale. Malts are blended to suit the beer style, then mashed with hop extracts to create hopped wort. The fresh wort is gently reduced to 80 Brix before being canned fresh on-site to retain its original delicious malt flavours.

Option One: The Basics Brew
Use Liquid Brewing Sugar or Dextrose.
For better body and head retention when using Dextrose, we recommend Premium Blend Light over straight dextrose.

Option Two: Crisp and Light
Use 1kg Extra Light Dry Malt Extract for a clean flavour profile, subtle malt character, and a refreshing, crisp finish.

Option Three: Smooth and Satisfying
For a fuller mouthfeel and smooth finish, use Liquid Malt Extract.

Craft Yeast
The Brick Road Craft Range Mosiac Pale Ale includes craft style yeast (10g). To improve fermentation consider adding a second M66 Hophead Ale Yeast and using a total of 20.5g.

Note: When using craft yeast always check the ideal fermentation termperature range for that yeast. 

Yeast Nutrients
Add yeast nutrient to support a healthy fermentation, ensuring your yeast performs at its best for full attenuation and a consistent result.

Finings
Use Liquid finings for a crystal clear finish on your brew.

Dry Hopping

Dry hops are included with the Brick Road Craft Range Mosaic Pale Ale. To boost the pacific fruit and citrus aromas consider adding an additional 50-100 grams of:

  • Galaxy Hops for an intense burst of passionfruit, peach, and citrus.
  • Motueka for bright lime, lemon zest, and subtle tropical fruit notes.
  • Nelson Sauvin for bold gooseberry, white wine, and tropical fruit character.
