Liquid Malt will give you a smoother mouthfeel and more body. Try one of:
For a subtle malt character use 1.7KG of Ultra Light LME. A favourite combination among our community is using 1.7KG of the Amber Malt Extract with this brew which will give you a deeper colour and light caramel tones in your brew. If you’re looking for some complexity in the flavour profile you could also use 1.7KG of Wheat Malt Extract which will give you mild, bready, and slightly grainy flavor and may also contribute to a slight hazy effect in your colour profile.
Premium Yeast Options:
The Black Rock Pale Ale does come with style appropriate yeast. Selecting a premium yeast can give you more flexibility when brewing in ambient temperatures and can improve the quality of your final product or support unique flavour characteristics.
Particularly if you are dry hopping this brew we would suggest using the M66 Hop Head Ale Yeast or the SafAle US-05 Yeast, which are both well suited to hoppy profiles. If you are looking for a clean finish we would suggest the M54 Lager Yeast.
Suggested hop pairing:
Use up to 200grams of hops (in equal portions of each variety).
Option One: NZ Cascade and Nelson Sauvin
This pairing creates a refreshing Pale Ale with a bright and juicy profile, perfect for a modern, hop-forward beer. This combination would bring the classic citrus and floral notes from Cascade NZ, balanced by the unique white wine, gooseberry, and tropical fruit flavors of Nelson Sauvin. Expect a complex aroma with a mix of grapefruit and gooseberry, with subtle hints of lychee and passionfruit.
Option Two: Motueka and Riwaka
This combination would result in a highly aromatic and zesty Pale Ale, with layers of tropical fruit flavor and a crisp, punchy finish. Motueka offers fresh lime and tropical fruit flavors, while Riwaka is known for its intense passionfruit, grapefruit, and citrus notes. This duo would give a super citrusy and vibrant aroma, reminiscent of a tropical fruit salad with zesty lime.
Option Three: Pacifica and Nelson Sauvin
This pairing would create a balanced Pale Ale with a softer bitterness, highlighted by citrus and fruit-forward characteristics, making it approachable yet complex. Pacifica brings sweet orange and subtle floral notes, which complement the distinctive white wine and tropical flavors of Nelson Sauvin. The aroma would be a harmonious blend of orange marmalade, apricot, and crushed gooseberries, with a floral undertone.

A decent Pale Ale, albeit I use it in a clone brew and add the amber liquid malt. Works well for what I am doing. Picture as brewed with amber malt.
