Additional Fermentables Required

To get the best from this brew, you’ll need to add fermentables. Choose one of the following options depending on your style preference:

Option One: The Basics Brew
Use Liquid Brewing Sugar or Dextrose.
For better body and head retention when using Dextrose, we recommend Premium Blend Full over straight dextrose.

Option Two: Malt Character with Crisp Body 
Use 1Kg of Dark Dry Malt Extract to give support depth and complexity in the malt profile with a crisp finish for an every day brew.

Option Three: Smooth and Satisfying
For a fuller mouthfeel and smooth finish, use Liquid Malt Extract.
Choose 1.7Kg Black Rock Dark or to introduce a little more hop flavour to the profile try the 1.5Kg Brick Road Hopped Dark

Chose from the required fermentables above (either dry or liquid malt for best results) and then add further:

Note: Too much dextrose can affect your flavour profile. We wouldn’t suggest more than 1Kg of dextrose.

Optional Extras

Boost your brew with these recommended extras for better flavour, fermentation, and finish:

Craft Yeast
Upgrade your fermentation by using a quality craft yeast.

Option One: For a yeast that ferments with a clean profile, or if you are brewing a higher ABV brew, we recommend 2 x packets of the M42 Strong Ale yeast (20g total) to let the full character of the malt take centre stage..

Option Two: For that ferments with rich, dark fruit flavours and is is suited to full bodied ales and with exceptional depth go with 2 x packets of the M15 Empire Ale yeast (20g total).

Note: When using craft yeast always check the ideal fermentation termperature range for that yeast. 

Yeast Nutrients
Add yeast nutrient to support a healthy fermentation, ensuring your yeast performs at its best for full attenuation and a consistent result.

Making a Milt Stout?

To make a Milk Stout ferment your brew with Lactose (in addition to the required fermentables. Check out ‘Mastering Lactose‘ in useful resources for a full guide including suggested dosage rates. If you’re using Lactose for the first time, start with a LOW dose to get a sense of the flavour profile.

Finings

You can use finings, but they won’t offer a benefit with dark brews like stouts.
