Russell’s brewing tip: Only use finings if you’re looking for clarity. If you want a ‘hazy’ finish or colour feel free to leave them out. If you have temperature control crash cooling before bottling or kegging will help with clarity and I always rack the brew off into a bottling bucket especially if I am using a flat bottom fermenter. Doing this helps to avoid the by-product of fermentation or ‘sludge’ mixing into my beer. To rack the beer off I use the Easy Syphon and a second barrel with a tap. If you don’t rack off you could also use a sediment reducer.
